Pumpkins, the Sequel.

With pumpkins come seeds. Lots of them. Naturally, my only course of action is to roast them.

The first step is to rinse them to get the pumpkin guts off, and then lay them out flat on a dish towel to dry overnight.

In theory, the next step shouldn’t happen for another eight or so hours. But, if you’re me and you have a cold, you may find yourself awake from 2:30 a.m. onwards, and eventually you just give up on sleeping. Or was it 1:30 a.m.? I’m not sure. It was the daylight saving time change this morning.

So, you put the seeds into a container and add the spices/herbs of your choice, and oil. I went with dill and a hint of paprika, and olive oil. Place lid on container, and shake until the seeds are evenly coated. Spread the seeds out a cookie sheet, and roast in the oven at 350 F for 20 minutes.


This was the part where I made a cup of tea and attempted to find something on TV that wasn’t 100 Huntley Street at 5:30 in the morning. I settled on Coronation Street , and was shocked to discover that Rita looks the same as she did 10 years ago.

Once 20 minutes have passed, pull the seeds out and let them cool.


Best enjoyed with tea while watching cheesy British soaps on the couch with cats.
